I have been getting more and more into cooking extra food at meals and then having it to “mix and match” with throughout the week. I try and cook each bit separate if I know there will be a lot left over so I can change how its used for the next meal and its had been going great until these past few months. Between a surge of business and traveling a bit, I have not been cooking many meals so there are not many cooked “components” in the fridge for quick meal prep. This has basically made me rely on cereal and yogurt and has let my hard work of working out and eating well for the last 6 months go to waste. This last part is especially sad as I am in my sisters wedding in 3 weeks and I will be 10 years older than the other 9 girls on the alter. So this quest is inspired by part health, part vanity and part laziness…hopefully that’s the trifecta of success.
This is a shot from my fridge this summer…oh watermelon, how I miss you!! You see the bottom right there…the stacked containers? Those contain a turkey chili, quinoa and brown rice. If there was some cooked chicken, sautéed zucchini and maybe navy beans, I would have endless options! My goal is to spend a few hours each week prepping for the week ahead. The only thing holding me back is that I have the most time on Saturdays and Sundays, but grocery shopping on those days is a nightmare. I’m thinking though that if I shop on Friday, Saturday will be my cook day. I have been super inspired by this post all about meal prep and am raring togo but alas I went shopping today and have a group of girls coming over in an hour and am already behind on both my shop orders and a few hefty wholesale orders, so the plan is out the window for the next few days. But next week…next week it will happen!! And then I will share all about how it’s going here. See what I did there? I made it so y’all will hold me accountant-able…boom!
