I cooked salmon for the first time last week

I have a confession to make, with all of the healthy cooking I have done over the years, I have never cooked fish. Mainly because I fear food smells that linger for the rest of the night or into the next day in the house. I know, its a ridiculous reason, but its one of my pet peeves.  I however, was stating to feel limited in my dinner repertoire and have been craving fish, so I got over myself and cooked my first salmon dinner last week. This was of course after I asked the fish lady at the store questions for 20 minutes and consulted my fav cook book. Then I realized I had been seriously cheating myself because I had delicious salmon cooked in under 20 minutes, and this was including making a marinade. Now I’m a convert. I tend to latch onto a recipe and make it until I’m sick of it before I move on, but there seems to be infinite possibilities of how to prepare salmon for when that day happens.

I bought a single serving with the skin still on, brought it home, preheated the oven to 425 and lined a half sheet with parchment paper. I made a marinade with 1 part each honey, soy sauce, siracha, fresh lemon juice, salt and pepper. I put the salmon on the parchment paper skin side down, poured the marinade over it and baked it for 15 minutes. I served it with asparagus, quinoa and an avocado and tomato salad and it was perfection!

  1. I cook salmon for Uncle Ray and his favorite is brush the salmon with a mixture of honey and brown sugar and bake as you did yummy and so simple. Xoxo
